Rhubarb Recipe Ingredients:
1 1/2 c. margarine
3 c. flour
3 tbsp. sugar
6 c. rhubarb
9 egg yolks
3 c. sugar
6 tbsp. flour
1 1/2 c. evaporated milk
3 tbsp. orange rind
9 egg whites, beaten
1 c. sugar
1/4 tsp. salt
1 1/2 tsp. vanilla
Rhubarb Recipe Cooking:
Crumble margarine, 3 cups flour, and 3 tablespoons sugar together and spread in bottom of pan. Bake at 325 degrees for 10 minutes. Combine rhubarb, egg yolks, 3 cups sugar, 6 tablespoons flour, evaporated milk, and orange rind. Pour over crust and bake at 325 degrees for 45 minutes. Make meringue from egg whites and 1 cup sugar. Add salt and vanilla. Spread over baked cake and return to oven to brown lightly. Yield: 24.
