FLUFFY BAKED POTATO
Potato Recipe Ingredients:
1 med. baking potato
2 tbsp. Neufchatel cheese
Snipped chives or dried chives
Potato Recipe Cooking:
Scrub potato thoroughly. Use fork tines to prick into the potato. Bake in a 350 degree oven for 70 minutes or until done. Cut potato in half lengthwise. Scoop out the insides of the potato with a spoon and mash. Return mashed potato to shell. Beat the Neufchatel cheese lightly; spoon cheese atop potato. Sprinkle tops of potatoes with snipped chives. Makes 2 servings.
