ASPARAGUS BREAD SQUARES
Asparagus Recipe Ingredients:
2 c. flour
1 1/2 c. sugar
2 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ginger
1 c. buttermilk
3/4 c. oil
3 eggs, slightly beaten
1 can (approx. 14 1/2 oz.
or 1 1/2 c.) cooked
asparagus stems and
pieces, DRAINED and
chopped
1 c. chopped walnuts
Asparagus Recipe Cooking:
Sift together dry ingredients; add buttermilk and oil, beating until smooth. Add remaining ingredients; mix just until blended. Spoon batter into a greased and floured pan. Bake at 325 degrees for 45 to 50 minutes or until bread tests done. Cut into squares. Yield: About 15 servings.
